Quinoa is an ancient Incan grain high in quality protein. It is light and fluffy with a nutty flavor and is very nourishing and good for building energy. This dish will give you a soothing full but light feeling, keeping you energized until lunchtime. It is also a good option as a cleansing meal when your body needs a simple reset.
Ingredients:
- ½ cup uncooked quinoa
- 2 teaspoons ghee here's my favorite
- 1-inch fresh ginger, minced
- ÂĽ teaspoon ground cumin
- Pinch of hing (optional) here's my favorite
- 2 teaspoons liquid aminos
- 1 cup water
Optional toppings:
- Cilantro
- Coconut
- More Ghee
- Slivered Almonds
- Raisins

Directions:
- Rinse the quinoa in a fine-mesh sieve or strainer under cold running water.
- In a medium pot, heat the ghee over medium-low heat.
- Add the ginger and cumin seeds. Sauté about 1 minute, until fragrant.
- Add the cumin and hing, and stir for another minute.
- Add the quinoa, water, and liquid aminos. Bring to a simmer, cover, and cook over low heat until tender, about 15 to 20 minutes.
- Remove from heat. Let stand, covered, for 10 minutes.
- Fluff with a fork and serve immediately.

Tip: Garnish with fresh cilantro and coconut to cool off during summer months, an extra dollop of ghee for grounding in the autumn, slivered almonds for fortitude throughout the winter, and raisins for soothing through the spring.
